With Jennifer as my guide I can now say I have not binged in over 4 months, I eat what I want when I want, and I am on my way back to a healthy weight!

Before meeting Jennifer I truly believed I would never be able to eat food like a normal person. I recall binges where I would plan an entire day around eating from the second I got up to the time I went to bed. Hour after hour finding new foods to fill me up. By the end of the day I was so full the skin on my stomach ached from being stretched, and so nauseous I would have to take antacids so I wouldn’t throw up. This was my typical Sunday. By opening up to Jennifer and taking in all her advice and wisdom about how to cope with binge eating I have been able to change my relationship with food completely. She is extremely patient and understanding, and there is never any pressure to eat more of one thing, or less of another. I was able to go at my own pace when it came to learning how not to be afraid of food. Jennifer cheered me on the whole way. Even when I would come into her office after a huge binge, I would still leave feeling as though I was one step closer to letting go of my eating disorder. It was her faith in me, and her faith in our ability to find balance that kept me on my path. I gave up restriction whole-heartedly, and as scared as I was of gaining weight, I just let go. With Jennifer as my guide I can now say I have not binged in over 4 months, I eat what I want when I want, and I am on my way back to a healthy weight! The profound effect Jennifer's counsel has had on my life cannot be put into words, but I will make an attempt.

First of all, I always feel that Jennifer really cares about me as an individual. I never feel like just anot her one of her many clients.

The restrictive eating pattern I've had since my teen years has been a dangerous coping mechanism that progressed to be potentially life threatening. Although I was able to be successful in business in my 20's, 30's and 40's, by 50 when a number of life changes occurred at once (including marriage and stepchildren), anorexia took over my life. When I began to see Jennifer, I was at such a low weight that I satisfied the requirements to be hospitalized. My restrictive eating allowed only certain non-fat foods once a day.

Jennifer listened to me, investing her knowledge and soul, giving me the confidence to believe that I could change my relationship with food. The environment she created was one where I could safely divulge my thoughts...all my thoughts including those I felt shameful of...those I hadn't shared with anyone in my life. I could stop hiding. She intuitively knew how much change I could handle without increasing my fear and anxiety. We took one step at a time. And while there were expected setbacks along the way, every time we finished our session together, remarkably I moved from sometimes extreme disappointment with myself to being inspired with the courage of taking yet another step.

Her solid knowledge of nutrition allowed me to successfully complete two complicated surgeries involving bone fusion in my feet. Although challenged with being underweight yet gradually gaining, my body was nurtured with food required for proper bone growth and healing.

I never considered that eating like a "normal" person was even remotely possible for me. I have more work to do, but today I can enjoy guilt free eating and a range of foods I never al lowed myself before. Certainly for most of my life, food was the enemy, something to avoid, a source of pain. Now, I see that food can be a source of joy. Pleasure. Health.

Cooking has become an activity I no longer avoid. From her brilliant team of culinary colleagues, I have discovered that I too can cook! Their way of teaching basic techniques and principles inspired me without overwhelming.

I wanted to let you know that your recommendations have helped me a TON!

I have come off of the candida diet completely, and some miraculous changes have taken place. After being intolerant to beef for 10 years, I can now eat it again. Beef used to trigger extreme symptoms for me. In addition to the typical IBS red meat symptoms of pain/bloating/constipation, I also would get migraines, cystic pimples on my face, and major negative mood swings after consuming a small portion of beef. Now I can eat it just fine, no pain or indigestion, and no problems with going #2 the next day at all. :)

The other major thing that happened was, after that episode of bad gut pain toward the end of the cleanse, things gradually calmed down. Once they settled, I found that I no longer had the lower right quadrant pain that has plagued me for over 4 years. Literally nothing had helped that gut pain until your soluble fiber suggestion and doing some breathing, body awareness, meditation, and EFT and even then, it only lessened it a bit. Prior to seeing you, I had cut out gluten and dairy, taken probiotics, cod liver oil, bone broth, fermented foods, done exercises, colon hydrotherapy, juicing, etc. All those things helped my health in different ways, but they did nothing for the gut pain in that one spot.

Well, it's GONE. That embarrassing terrible gut pain is gone. I never revealed the full extent of it even to you: it made my love life hell for the last four years.

I can now push on that part of my belly and it's not tender or sore the way it used to be. It's still more "sensitive" than other areas because my body guarded that area so much since it always hurt.... but the pain is gone!! Also, nothing I've eaten has caused a major flare-up of that pain. Even if it feels a little "off" it's very different than it used to be. A little tender sometimes, but no sharp pains anymore.

I just wanted to let you know that you are usually the one who inspires me to get back on track and I appreciate it even if I resist sometimes (or most of the time). I just wanted to thank you again for your guidance these last couple of months. The BIA test that you did with me told a pretty dismal story at my second visit. The fact that by my fourth and final visit the test results were so drastically different really blew me away. You accomplished so much with me in such a short amount of time! The cherry on top was when I got home from that very visit... my blood test results were in from my physical (done the week before), and my cholesterol was 115! (good cholesterol was high, and bad cholesterol was low). My calcium levels were really high (yea keifer!) and everything was in the perfect range of where I should be. Anyway, I really appreciate what you did for me and what you do for everyone!

Thank you so much for such an amazing trip! I think I have found a new obsession in Northwest sea vegetables. This trip took seaweed to a whole new level for me. To be able to experience it alive in nature, through harvesting, transport and processing, then into my cooking really makes me feel connected to what I am eating! . I especially enjoyed the kelp beds, but I also thought it was great that the tide was in when we harvested at the beach. I felt compelled to write you to thank you so much again for all the guidance and support you gave me last year at this time. First of all, based on all the nutritionists on my insurance list of 30, it was a huge blessing that I picked you, as I feel anyone else probably would have put me on a restricted diet and I would not see lasting results or get to the deeper issues.

When I first came to see you I was obsessed with caloric intake, avoiding “bad foods,” had body image issues and was also a binge eater. I was not comfortable in my own skin! I can’t believe my new energy level.

For ten long years, I was plagued by painful, chronic acid reflux disease. It ruined my honeymoon and my daughter’s wedding. My well-meaning doctors and well-respected surgeons all insisted that I would need to remain on Nexium for the rest of my life. I could not bear the thought, but… I took the drugs they prescribed for eight years. Just wanted to drop you an email to tell you that I am absolutely amazed at how good I feel this week. I took your advice and in addition to adding kefir, I got a probiotic supplement (Reuteri brand) at Whole Foods that has 5 billion and seems to be helping with the cravings a lot. My husband and I have both been taking it and neither of us have ANY cravings for sugary things. We have totally changed the way we are eating to focus on ADDING good things instead of just AVOIDING the bad things. It seems so doable and I haven’t felt that deprivation mindset at all. I have energy, and I am sleeping better, etc. I can’t wait to talk with you more at our next appointment about other healthy changes I can make. I don’t mean to be so effusive, but I can hardly express how much of a positive impact you have made on my life. I am thankful for it everyday. Many of my conversations with my parents, customers, and co-workers begin with the sentence, “My favorite nutrition professor says…” followed by some tidbit of wisdom I learned in one of your classes. Thanks for another great PCC Cooks class last night! Yum on every item, and I just wouldn’t think I would ever be saying Yum when eating steamed bulgur.

I first took a class on improving my metabolism from you a couple years ago. You provided information that was so foreign to what I had understood from conventional (USDA) information, and even so different from what I had learned growing up in the sixties with our whole grains, crunchy granola, back to the land information. You told us about pastured animals, about using good pastured animal fat to help us boost our metabolism and stay healthy. You mentioned the book Real Food: What to Eat and Why and I immediately ordered the book that changed our lives (mine and many family members). We now try to only eat pastured animal meats, eggs, and dairy along with many more fresh vegetables and fruits. With diet change and lots more exercise I have lost 105 pounds in just over a year. I have almost lost my symptoms of Asthma, my arthritis is greatly improved, and I feel strong and full of energy! I love trying ideas for eating and have lots of fun when my husband with his very discriminating palate says “Yum”! We eat lots of soups as main course in the winter, often just soup and salad for dinner, and summer has us eating huge salads every day. Salad with some free-range chicken or pastured beef on top is delicious! Thanks again for your fun and informative class. We will be eating the white beans with spicy beef tonight, for sure, along with the delicious kale salad.
